A foolproof, classic French Quiche Lorraine made easy for beginners. Using a store-bought refrigerated pie crust saves time, while a precisely balanced egg-to-cream ratio ensures a silky, rich custard that sets perfectly every time.

Method
- Preheat your oven to 400°F (200°C). Gently press the refrigerated pie crust into a 9-inch pie plate, crimping the edges for a decorative finish. Place the crust in the freezer for 10 minutes to firm up. (400°F) — 10 min
- Line the chilled pie crust with parchment paper and fill it with pie weights or dried beans. Bake for 15 minutes. Remove the weights and parchment, then bake for an additional 5 minutes until the bottom is dry and lightly golden. Lower the oven temperature to 325°F (163°C). (400°F) — 20 min
- While the crust bakes, cook the chopped bacon in a skillet over medium heat until crispy. Transfer the bacon with a slotted spoon to a paper towel-lined plate to drain. — 8 min
- In a medium bowl, vigorously whisk the eggs, heavy cream, whole milk, salt, black pepper, and nutmeg together until completely smooth and slightly frothy. — 3 min
- Scatter the cooked bacon and shredded Gruyère cheese evenly across the bottom of the par-baked pie crust. — 2 min
- Slowly pour the egg and cream mixture over the bacon and cheese, ensuring the fillings are evenly distributed. — 2 min
- Bake at 325°F (163°C) for 35 to 40 minutes, until the edges of the quiche are set and golden, but the center still has a slight, gentle jiggle when nudged. (325°F) — 40 min
