Ingredients
- Plain or All-purpose flour360 g
- Lukewarm water470 g
- Instant or active dried yeast6 g
- Salt6 g
- Baking powder10 g
- Sugar8 g
- Olive oil for greasing14 g
- Soft butter for greasing30 g
Method
- 1
Add the sugar and yeast to the warm water, mix well and allow the yeast to activate for 10 to 15 minutes until it foams up. If there is no activity after 15 minutes, your yeast must be dead and needs replacing.
⏱ 15 min - 2
Add the flour and salt to a bowl, and sift in the baking powder, pushing any lumps through with your fingers. Mix together, then add the active yeast and sugar mixture.
- 3
Using a hand whisk, beat the mixture together for 2 minutes. Halfway through the whisking, scrape down the sides of the bowl, then continue whisking. (If using an electric whisk, beat for only 1 minute).
⏱ 2 min - 4
Scrape down the sides of the bowl again, cover, and rest it in a warm spot for 45 minutes.
⏱ 45 min - 5
Near the end of the 45 minutes, heat up a large non-stick frying pan to a temperature of 190°C (375°F).
🌡 190°C - 6
Add the olive oil and soft butter to a bowl. Using a pastry brush, coat the inside of the crumpet rings or moulds with the butter and oil mixture, then place the rings into the hot pan.
- 7
Spoon the active, bubbly crumpet mixture into the hot rings to about halfway up. Repeat for up to 3 more rings, ensuring you do not overcrowd the pan.
- 8
Maintain a constant temperature of 190°C (375°F) so the bottoms do not burn before the tops cook. After 5 minutes, classic crumpet bubbles will start to appear; use a small pointy knife to pop any stubborn bubbles.
🌡 190°C⏱ 5 min - 9
Once the mixture has dried out around the edges, use oven mitts to lift off the rings. Once the middles are less gooey, carefully turn them over to brown off the tops.
- 10
Once golden brown, remove them from the pan and place onto a wire rack to cool completely. Once cool, they can be frozen or kept in the fridge.
- 11
To serve, toast the crumpets for 3 minutes and serve piping hot with butter, jam, or any topping of your choice.
